Vinification This vintage was very consistent and crop yields were low but fruit quality was excellent. The cool harvest temperature slowed the accumulation of sugars and allowed us to hang the fruit longer and develop more varietal character. Winemaking The grapes for this wine were stainless steel fermented for 25 days. We used only the purest free-run juice and allowed the wine a long, cool fermentation to maintain its intense flavours and aromas. Aroma / Bouquet / Nose Subtle floral aromas lift from the glass while fresh green apple and a hint of pineapple intermingle displaying a fresh acidity. Savour crisp orchard fruit balanced by honey and melon for a clean, bright finish. Food and Wine Pairing A magical pairing with Thai chicken accompanied by fresh garden vegetables Barbequed on skewers. Or enjoy with a salmon quiche and mixed green salad. Unforgettable with an exotic fruit plate and Edam, gouda or havarti cheese.
