Harvest The grapes for this wine were carefully selected and picked on October 14th, 2006. Winemaking Our winemaker, Mark Wendenburg and his team fermented this wine in stainless steel containers for 10 days while the grape juice remained on the skins for 14 days to give this wine its brilliant colour. The wine was processed through a full malolactic fermentation and was then aged in 60% French and 40% American oak barrels. Winemaker's Notes Aromas of cassis and vanilla ascend from the glass while full malolactic fermentation and oak aging enhance the round flavours of plum and cherry. The long, lingering finish is graced with a hint of cedar and blackcurrant. Food Pairings Enjoy this luscious medium bodied wine with game meats such as venison or lamb chops or with a succulent, rich tomato-based sauce over pasta.
